
1C Flour
1 Tsp Nutmeg or Mace
1½ Tsp Bell’s Seasoning
If you can not find Bell’s seasoning you can use:
½ Tsp Sage
½ Tsp Thyme
¼ Tsp Crushed Rosemary
Pepper and salt to taste
1 Pkg Chicken 6-8 pieces
Melted shortening or oil for frying
Put all dry ingredients in a paper bag or gallon plastic bag. Shake to mix. Add the chicken pieces a few at a time and shake to coat the chicken.
Heat the shortening or oil in a deep frying pan (about 1” deep) until very hot, but not smoking. Place chicken in the pan and turn the heat down to medium. Fry on one side about 10-12 minutes) depending on thickness of the piece) until well browned. Turn pieces over and continue frying for another 10-15 minutes. Total frying time 30-40 minutes. Juices will run clear when the meat is cooked.
